Chef Tournant Jobs Responsibilities:

  • Ensures all food is prepared fresh and is of the highest quality
  • Strictly adheres to all recipes, methods and instructions from supervisor
  • Ensures team reports to work ontime and in a clean uniform
  • Maintains an organized and efficient flow of production, with regards to changes in forecasts and menus
  • Ensures development of team members through ongoing training
  • Recognizes team members for successful achievements and contributions
  • Coaches team members immediately and professionally to minimize deficiencies and provide encouragement
  • Responsible for inventories to enable team members to successfully prepare mise en place
  • Consistently checks temperatures in foods and follows proper procedures in regards to chilling, reheating, and holding food.
  • Maintains and reports waste log to supervisors on a daily/weekly basis
  • Checks outlet(s) upon arrival to determine status of outstanding safety, or equipment issues

Cook Responsibilities:

  • Provide leadership to area of responsibility
  • Ensures all food is prepared fresh and is of the highest quality
  • Strictly adheres to all recipes, methods and instructions from supervisor
  • Continually trains, coaches, and recognizes team members to improve food quality and meet budget expectations while motivating team members
  • Arrives ontime in clean uniform
  • Maintains an organized and efficient flow of production, with regards to changes in forecasts and menus
  • Responsible for miseenplace, and food service for production area
  • Consistently checks food handling and storage procedures while training team members to do the same
  • Assists Chef Tournant in documenting and maintaining a waste log to improve forecasting and production models
  • Assists Chef Tournant in adjusting daily requisitions to reflect trends and forecasts
  • Completes daily walkthru upon arrival to outlet to ensure equipment is in good repair and outstanding safety and sanitation issues have been resolved
  • Conducts daily walkthru prior to leaving to ensure cleanliness, rotation, and proper labeling of all food items, proper storage of all food items, proper removal/disposal of leftover item to crew mess, buffets, etc.
  • Actively participates in daily focus meetings with team members to ensure communication and daily expectations

Jobs Requirements:

  • At least 2 years of experience in upscale restaurants in 4 or 5 star hotel or fine dining stand alone restaurants.
  • Advance knowledge in Chinese Cuisine
  • Ability to speak English language
  • Ability to speak Mandarin language is an Advantage
  • ONLY Malaysian eligible to apply.

Job Type:
Contract

Contract length: 8 months


Salary:
RM5, RM12,000.00 per month
