Job Overview
The Kitchen Supervisor at Seloka Nasi Lemak, Seloka Cafe is responsible for supervising daily kitchen operations during assigned shifts, ensuring food quality consistency, halal compliance, hygiene standards, and operational efficiency.
This role focuses on shift-level execution, staff supervision, and ensuring all SOPs are followed. The Kitchen Supervisor reports to the Assistant Outlet Chef/Assistant Head Chef or Outlet Chef/Head Chef and acts as the operational leader during their assigned shift.
The Kitchen Supervisor is accountable for maintaining halal integrity and operational discipline on the ground level.
Job Description
A. Shift Supervision & Operations
- Supervise kitchen staff during assigned shifts.
- Ensure proper station setup before service (mise en place).
- Monitor workflow and manage peak-hour coordination.
- Ensure timely ticket completion.
- Address operational issues immediately.
B. Food Quality & Consistency Control
- Ensure all dishes follow approved Seloka recipes.
- Monitor portion control and presentation standards.
- Conduct random taste checks.
- Prevent deviation from recipe and portion guidelines.
- Ensure nasi lemak components meet consistency standards.
C. Halal Compliance
The Kitchen Supervisor is directly responsible for ensuring halal compliance during shift operations.
- Enforce halal preparation and handling procedures.
- Monitor segregation of halal ingredients and utensils.
- Prevent cross-contamination.
- Ensure proper storage and labeling.
- Conduct routine checks on halal handling compliance.
- Immediately report any non-compliance or risk.
- Ensure all staff adhere to halal hygiene requirements.
- Zero tolerance for halal breaches during shift operations.
D. Food Safety & Hygiene Enforcement
- Enforce HACCP compliance.
- Conduct workstation cleanliness inspections.
- Ensure proper food storage temperatures.
- Monitor FIFO and labeling system.
- Ensure daily cleaning checklists are completed.
- Enforce personal hygiene standards.
E. Inventory & Wastage Monitoring
- Monitor daily stock usage.
- Report low stock levels promptly.
- Minimize wastage through portion control.
- Ensure proper storage and stock rotation.
- Assist in stock take when required.
F. Team Leadership & Discipline
- Guide Line Cooks and Kitchen Assistants.
- Provide basic training and coaching.
- Enforce discipline and professionalism.
- Address minor staff performance issues.
- Promote teamwork and communication.
G. SOP Compliance & Reporting
- Ensure adherence to kitchen SOPs.
- Submit daily operational reports (if required).
- Escalate major operational issues to Assistant Outlet Chef/Assistant Head Chef /or Outlet Chef/Head Chef.
- Support audit preparation.
Job Requirements
- Minimum 3–5 years kitchen experience.
- At least 3 year in supervisory or senior role preferred.
- Experience in Malaysian cuisine (nasi lemak knowledge preferred).
- Understanding of halal compliance procedures.
- Knowledge of food safety and HACCP standards.
- Ability to manage shift-level operations.
- Strong communication and leadership skills.
- Willing to work shifts, weekends, and public holidays.
