With the rapid expansion and future p developments, we are seeking for a meticulous, strong & innovation Executive Chef - Manufacturing & Central Kitchen Production.

    The Executive Chef – Manufacturing & Central Kitchen Production (MCKP) is responsible for coordinating and managing all activities related to food production, quality control, inventory management, staffing, and overall efficiency within the central kitchen & manufacturing facility. He/She is also responsible for ensuring compliance with food safety regulations (GMP/HACCP/HALAL/ISO and implementing strategies to optimize productivity and cost-effectiveness. Essentially, He/She has a thorough understanding of food safety and quality standards, and the ability to manage a high-volume production facility efficiently.

    The role requires he/she to be a 'key leader' to the MD, and to develop and implement MCKP standard operating procedures to include Health and Safety compliant SOP, establish and manage the MCKP budgets and ensuring smooth daily operations. He/She is responsible to oversee the entire process of Central Kitchen Production, Manufacturing, R&D for brands under Kenny Hills Hospitality Group including new Ready-To-Eat (RTE) lines and any manufactured packaged food brands in the future.

    Job descriptions includes but not limited to;

    1. Uphold and display the Kenny Hills Hospitality Group' Vision, Mission and Family Values at all times.

    Operations Management:

    2. Coordinate and manage the day-to-day operations of the MCKP and ensuring efficient production processes, including food preparation, cooking, and packaging.

    3. Monitor inventory levels and manage supplies to prevent shortages or wastage.

    4. Establish new food production standards and SOPs which complies to company standard & food and safety & hygiene regulations

    5. Provide high level inputs on research and development activities

    6. Develop business continuity and crisis management plans across the operation

    Quality Control:

    7. Implement and maintain quality control standards for food production.

    8. Ensure that food safety and hygiene regulations are strictly adhered to. (GMP/HACCP/HALAL/ISO

    9. Conduct regular inspections to guarantee the quality and consistency of food products.

    Menu Planning and Recipe Standardization:

    10. R&D new food items according to company standards & requirement.

    11. Standardize recipes to maintain consistency in taste, portion sizes, and quality.

    People:

    12. Develop strategies to enhance productivity, engage, train & mentor staff

    13. Ensure succession and manpower planning are in place according to the company objectives and policies

    14. Perform audit on staff adherence with KHHG personal, food and beverage hygiene standards

    15. Manage a diverse environment, which involves promoting inclusiveness, building team cohesion and managing diversity challenges and opportunities that may have implications on service delivery.

    Cost Management:

    16. Monitor and control operational costs, including labor, ingredients, and overhead expenses.

    17. Implement cost-saving measures without compromising food quality.

    Logistics and Distribution:

    18. Coordinate the logistics of food distribution to various outlets or locations.

    19. Ensure timely delivery of food products while maintaining proper temperature and hygiene standards.

    Equipment Maintenance:

    20. Oversee the maintenance and proper functioning of kitchen equipment.

    21. Arrange for repairs or replacements as needed to avoid disruptions in production.

    Compliance and Regulations:

    22. Stay informed about local health and safety regulations, and ensure compliance with food service standards.

    23. Work with relevant authorities to obtain necessary permits and licenses.

    Continuous Improvement:

    24. Identify opportunities for process improvement and implement best practices.

    Stay updated on industry trends and technological advancements in food production

    Who we are looking for;

    1) Bachelor's Degree in Culinary /Hospitality Management

    2) Minimum 7 years of relevant experience managing Central Kitchen operations, Manufacturing, R&D and Ready-To-Eat (RTE) operations

    3) Knowledge of Food Safety & Hygiene Management standards & principles (GMP/HACCP/HALAL/ISO 22000)

    4) Demonstrate strong organizational, time management skills, strong analytical and problem-solving skills

    & possess high level of can do attitude

    5) Able to lead the implementation of SOP's, change programmes to deliver operational benefits

    6) Ability to work within tight timelines, be responsive to Company matters and attend to work with speed and quality

    7) Budget salary for this role is RM9,000 to RM13,000
